Method:

  1. Prepare marinade by pouring milk into a shallow pan or dish that is large enough to hold the filets. Squeeze fresh lime juice into the milk. Make sure that no lime seeds get into the marinade. Mix well. Keep the lime skins.

  2. Place fresh shark filets in marinade.

  3. Place lime skins over fish in marinade.

  4. Cover and marinate in refrigerator for 2 to 4 hours.

  5. Remove shark and discard marinade and lime skins.

  6. Cut marinated shark into 1 inch wide strips and place in a bowl.

  7. Season fingers with seasoned salt and black pepper.

  8. Drizzle evaporated milk and hot sauce over seasoned fingers and toss to cover.

  9. Make breading by mixing equal parts of flour and bread crumbs in a bowl.

  10. Dredge fingers in breading.

  11. Fry fingers in oil until golden brown.

Of course, you can also fry larger pieces of shark filet using this recipe. We use larger pieces (about 4 inches square) for shark burgers.
